Breakfast for Dinner

 I'm not a huge breakfast person...Except for when we have breakfast for dinner!  As a kid, it was always super exciting when Mom would mix things up and make a fun breakfast at 6pm! And it meant that I didn't have to eat vegetables that night, which is probably the real reason that it was so exciting.  Now with a family of my own to cook for, we keep this fun little tradition going by having breakfast for dinner about once a month or so! 

This week we made Sausage, Egg and Cheese muffins.  This recipe came from my Aunt Mary, who is just such a fabulous cook! Now, I'm not a big fan of eggs, so when she told me about this little concoction when we were visiting a few years ago I wasn't all that excited.  But Holy Goodness!!  These things are DELICIOUS!  My family watched in amazement as I quickly scarfed down 4 of these things! (I was training for a marathon at the time - don't judge!)

Anyway...Hope you enjoy!


What you'll need:
1 lb Ground Sausage (I like the maple kind, but you can use whatever!)
1 Can of Flaky Biscuits
5 Eggs
Shredded Cheddar Cheese
Cooking Spray
Muffin Pan







First, cook your sausage and drain.  The sausage will need to cool a bit once its cooked.
While the Sausage is cooking/cooling, beat the 5 eggs and add 1 cup of cheddar cheese.

Next, tear the biscuits in half (this is why you need the flaky kind), stretch them out and make a little bowl in the muffin tin.

  

Now that the sausage is cooled, add it to the egg/cheese mixture.  If it's not cooled the sausage will cook the eggs, and we don't want that!
Fill each biscuit bowl with the Sausage/Egg/Cheese mixture
And Bake according to the biscuit package instructions!  I baked these on 400 degrees for about 8 minutes!

  1. Do you know if these refrigerate and reheat well? I like to make all my boyfriends' breakfasts for him on Sunday night and pop them in the fridge so that he can just microwave them before he heads off to law school and I don't have to get up at the crack of dawn.

  3. I also don't like breakfast--but love it in the evening! Actually I really just don't like mornings. Anyway--my husband will love this because he likes sausage, but for the kids and I I think crumbled up bacon would be delicious. Thanks for sharing this recipe!
